Product description
Immerse yourself in the delicate pleasure of our fillet - finely seasoned and mildly smoked for a unique taste experience. Handpicked and refined with a mixture of salt and aromatic mountain herbs, it gets its fine note from a light smoking with beech wood chips and juniper berries. Matured in the clear mountain air of the Burggrafenamt, each piece of the tender fillet is a feast for the senses. The perfect balance of mountain herbs, smoky notes and alpine freshness reflects the traditional South Tyrolean craftsmanship. Enjoy our smoked fillet - a culinary masterpiece that combines the aromas of the Alps in every slice.

Frequently asked questions (FAQ): Your answers to South Tyrolean enjoyment
How long do your South Tyrolean specialties last?
The shelf life of our products varies depending on the type. However, you can usually expect a shelf life of several months to a year. You can find the exact information on the product labels.
What is the best way to store your products?
Our products should generally be stored in a cool and dry place. Refer to product labels for specific storage recommendations, which may vary depending on the product.
How is the quality of your products ensured?
The quality of our products has top priority. We work closely with local producers and carry out strict quality controls to ensure that only the best products are offered to our customers.
Air leaks during delivery: what to do?
If you notice that the vacuum packaging is leaking upon delivery, the product should be unpacked immediately. A damaged vacuum allows air to enter, which can lead to the formation of a layer of mold. This layer forms during ripening and is usually removed before vacuuming.
Is the product still edible? Basically yes. Wash the product thoroughly with hot water and dry it well. Cut off a piece to be sure and the product will be edible again.
What makes your products unique?
Our products are characterized by the authentic quality of the South Tyrolean region. We use traditional production methods and high-quality ingredients from Germany, Austria and Italy to preserve the distinctive taste of South Tyrolean specialties. Every product is a piece of South Tyrol in every bite.
Where do the animals used for your products come from?
Our products come from the breathtaking regions of Germany, Austria and Italy. Our producers in South Tyrol carefully select local producers to ensure that only the best ingredients are used.
How do you cut bacon correctly?
Cutting bacon is a matter of personal preference, and there are no hard and fast rules. In the South Tyrolean tradition, bacon is cut into strips by hand to emphasize the authentic taste experience. Still, people's preferences vary, and some may prefer wider discs. The secret to developing the full flavor lies in the thinness and the temperature. Bacon develops its flavor best when sliced thinly and served at room temperature. An important note: The bacon should be cut against the grain to ensure it is easy to chew and tastes optimal.
